Mango & coconut Chia parfait Recipe
Organic, vegan, dairy free & gluten free!
This is the season for mangoes! Either fresh or dried, this tasty sweet fruit provides you with up to three times your recommended daily intake of Vitamin A and Vitamin C! Vitamin C is an antioxidant important in protecting the body from infection and is required in the formation of collagen, a protein that gives structure to bones, cartilage, and muscles.
First step is to make your chia pudding mix, you will need:
0.5 cup chia seeds
1 cup coconut milk
1 cup water
a few drops of vanilla
In the morning make your muesli! You will need:
1 cup of Organic Almond, Coconut & Vanilla Bean Muesli( or other muesli of your choice)
3 dried apricots (chopped)
6 dried pineapple (chopped)
Handful dried incaberries (around 14)
(You find these ingredients in the Farm Wholefoods pantry)
For the topping you will need:
1 Glow Bar (we sell these delicious bars at the Farm Wholefoods)
100 grams coconut flakes
4 pieces of dried pineapple
4 pieces of dried mango
2 tablespoons coconut yogurt
1. You will need two normal sized drink glasses to build your parfait layers in.
2. Start with a layer of chia pudding, then a layer of muesli and fresh mango on top of this.
3. Do the exact same layers one more time.
4. Finish off your parfaits with a spoonful of coconut yoghurt, crumbles from the Glow Bar, coconut flakes and a slice of dried pineapple and dried mango
